White Sturgeon (Acipenser transmontanus).
Target Marine Products is the only producer of White Sturgeon in Canada. The
white fish is dense and boneless. Sturgeon is available dressed or bullets
(head and fins off). Product is available when the sturgeon are in the appropriate size range. None is currently available.
